Hi Warren,
This can be changed by your administrators. They just need to edit the Language by going to Site Administration/Language/Language Customization/ then select the language pack to edit. Have them edit the mod/assignment.php language section. Note that there are two instances of this. One for plain text emails, and another for html emails.
