I used to teach Computer Applications and used Moodle for grading many things just as you describe. The problem is that I had to do the grading in most cases. In other words, there is no convenient way I know of to have Moodle grade whether a submission is using a certain font, size, or color. I had to do all that myself by visually inspecting each submitted project and then marking the results in a rubric. It has gotten a little more convenient with being able to mark directly on PDF formatted submissions, so that I no longer had to open each submitted file in a particular program such as a word processor, spreadsheet, etc.
