Using a grading block (Ajax/Grade Me/FN Marking Manager) may assist you with seeing each course's ungraded assignments and submission dates. You'll still have to go to each course though. I did hear you can put one of these blocks on your site's main page to see everything from all courses... not practical for my school so I never looked into that, but for you it may be something worth looking into.
