Thanks for all the suggestions. The grade book will always display the 100, it seems to hold on to it. However, you cannot enter a grade for the assignment and the points, even though listed in the grade book, is not included in the calculation. We did try Sakshi's suggestion, but could not delete the 100 point value. Very confusing, but we know how it behaves. so can work around it.
