There are a couple of options that spring to mind here:
- There is a Firefox extension called "DownThemAll". You can go to the assignment submissions page and activate DownThemAll, which allows you to choose files by type (e.g. PDF, .doc, etc.) and also select them individually via checkboxes.
- You could place the students in Groups and set up a Grouping for the Groups, then apply that Grouping in the assignment settings. That will then allow you to filter the list of submissions by group, and use the built in "Download all…" option on the filtered list.
