I experimented with this in the last semester.  Students were required for hand in work in process.  Each had a specific hand in time/date for specific points.  Each hand in netted more points than the previous one. In the end, the sum of the points were the grade for the project.  Each hand in was due two weeks apart therefore had their own respective entries in Moodle.

Instead of locking the assignments to no deletion, I allow them to update as often as they want before the due date then it is locked for further submissions.  The latest one gets graded.

Interesting fluke here is that a missed segment gets no points but it still has to be done for the final assignment.

I established a color code for rework so I did not have to re-evaluate the entire project if no changes were name.  I had an intense nitpick with the first submission to reinforce that I actually read them then was able to slack off as they understood the style I wanted them to use.
